Easy Argentinean marinated steak with a delicious sauce bursting with bold savory flavors and a hint of heat is good anytime of the year, but ideal to make on the grill during the warmer months.
Ingredients:
- 3/4 cup flat leaf parsley
- 1/4 cup basil or mint
- 1/4 cup cilantro
- 2 Tbs scallions
- 4 cloves garlic
- 2 shallots
- 1 Tbs fresh lime juice
- 1Tbs fresh lemon juice
- 3 Tbs red wine vinegar
- 1/4 cup EVOO
- 2 Tbs ripe avocado
- 1/4 tsp ground coriander
- 1/4 tsp sea salt
- NY Strip steak or steak of choice
Process the herbs first in a food processor, then add the rest of the ingredients and puree. Set aside.
We suggest using a NY strip steak. Rub with olive oil, salt and pepper, then grill to your liking. Rest for 5-7 minutes before slicing. Pour chimichurri over the top, or serve it on the side.
