This is my all time favorite recipe for granola! I make this granola often because it’s healthy, super simple and a great addition to any yogurt or even just a great on the go snack! It also makes a cute gift when put into a mason jar decorated with a ribbon on top.

Ingredients:

1 cup almonds ( you an use raw or roasted and even lightly salted)

1/3 cup melted coconut oil, when melted

1/3 cup packed brown sugar

1/4 honey

1/2 tsp cinnamon ( I add more because I LOVE cinnamon)

1/4 tsp salt ( I used sea salt or kosher salt)

1 tbs vanilla extract

4 cups rolled oats, NOT instant oats! ( I prefer Bob’s Red Mill Extra Thick Rolled Oats)

1/2 cup dried cranberries or other dried fruit if you prefer

Instructions:

Preheat oven to 150 degrees ( I typically preheat to 250 degrees but watch it carefully and bake for 20 minutes vs 30 minutes).

Grease and line a 11 x 7 raised side baking tray, with parchment paper.

Chop the almonds roughly and set aside.

Add the rolled oats to the almonds and set aside.

Place the coconut oil and honey into a microwavable safe bowl and heat for 30 seconds.

Add the brown sugar and stir to combine, heat for another 30 seconds.

Add the cinnamon, salt & vanilla and stir.

Pour the liquid over the rolled oats and almonds and stir to combine.

Spread the granola mixture onto the prepared baking tray and bake for 30 minutes or until lightly golden brown.

During the cooking time, remove the tray every 10 mins and give a little stir then put back into oven.

With 5 minutes cooking time remaining, add the dried cranberries and stir to combine * I add the cranberries to the rolled oats and almond mixture and cook it through. Comes out fine.

Remove the granola from the oven and set aside to cool completely. As it sets, it will harden up.

Break the granola into clusters.

The granola can be kept in an airtight container in the fridge for up to 4 weeks!

It is delicious sprinkled over plain or vanilla yogurt or even as a snack by itself. I hope you enjoy it.
